Recipe: Wellness Salad

- 1 bunch parsley, chopped
- 1 bunch mint chopped
- 1 lemon
- 3 tablespoons extra virgin olive oil
- 1 teaspoon raw honey
- Sea salt to taste
- 400 g (14 oz) small cucumber, diced
- 2 sticks celery, finely diced
- 1 green apple, finely diced
- 500 ml (2 cups/ 16 fl oz) thick natural yoghurt or labneh
COMBINE parsley, mint, lemon juice, olive oil and honey into a bowl.
SEASON with a little salt to taste.
ADD cucumber, celery and apple then mix through.
SPREAD yoghurt out onto serving plates.
PILE the salad next to or over the yoghurt.
DRIZZLE with extra dressing or a little olive oil.
SERVE and enjoy.
Add the zest of 1 orange.
Use pear in place of apple.
Use dill in place of mint.
